Red aztec spinach is a wonderfully beautiful cousin of quinoa - the leaves and seeds are edible and delicious. It is also a great drought-tolerant crop that produces even in high soil temperatures - over 140F!! Used for making tortillas before corn by native americans, huauzontle is an incredible plant to behold and eat. It's seeds are smaller than quinoa yet lack the saponins often associated with folks not liking quinoa (making these easier to digest). Plants grow anywhere from a 2-3 feet tall to 5-6 feet tall. Seed heads can concentrate but mostly they are branched. Grown in Zone 8b.
